Chhole Masala

A good chole takes time. Or at least it should taste like it did. Realm's Chole Masala is built around dried pomegranate, black cardamom and roasted spices, the combination that gives chole that dark, rich, slightly tangy depth that makes it unforgettable.

Perfect for Punjabi chole, chole bhature, and chole puri. A north Indian classic done right.

Recipe tip: Pressure cook soaked chickpeas with a teabag — it adds depth and a subtle earthiness to the chickpeas that makes a real difference. Fry onions till dark brown, add ginger garlic paste and chopped tomatoes. Cook till oil separates, add a generous spoon of Realm Chole Masala and the chickpeas. Simmer for 10 minutes. Finish with a squeeze of lemon and fresh coriander. Serve with bhature or puri.
