Pani Puri Masala

Mumbai style or Gol Gappa style teekha paani. That sharp, tangy, cooling hit that makes you reach for one more puri even when you said you'd stop at six. The flavour that every Mumbai or Delhi street corner has been getting right for decades.

Use it in the teekha pani.

Recipe tip: Blend 1 cup fresh mint leaves, half a cup coriander, 2 to 3 green chillies and a small piece of ginger into a smooth paste with a little water. Add 4 cups of chilled water, a generous spoon of Realm Pani Puri Masala, and a small piece of raw green mango blended in. The raw mango changes the pani completely. A fresher, fruitier tang that no powder alone can give you. Taste and adjust.
