Pune style. A deep, earthy blend with dried red chili and warming whole spices. The kind of misal that has a dark, rich gravy but sits light on the stomach. Not everybody makes the masala this way. Punekars will know the difference immediately.
Recipe Tip: Pressure cook sprouted matki with 1.5 cups water till tender. In a pan, heat oil and add chopped onion, ginger and garlic and saute till soft. Add fresh coconut and fry till golden. Grind this into a smooth paste with a little water.
In another pan, heat oil, add chopped onions till translucent, then chopped tomatoes till soft. Add the coconut paste and a generous spoon of Realm Usal Misal Masala. Mix well, add the cooked sprouts and a cup of the sprout stock. Simmer for 10 to 12 minutes till the gravy thickens. Finish with fresh coriander and cut lemon. Serve with buttered pav.
